Spaghetti Squash Au Gratin
1 med. spaghetti squash
2 Tbsp. butter
1 sm. yellow onion, cut in 1/2 & very thinly sliced
1/4 tsp. red pepper flakes, or more if you like it spicy
1 tsp. fresh thyme
1/2 c. sour cream
1/2 c. shredded cheddar cheese
Cut the spaghetti squash in 1/2 & remove the seeds.
Place in a covered dish w/ a ¼ inch of water & microwave for 10 -12 mins. In a med. sized skillet over med. heat, add the butter, onions, red pepper & thyme & cook until the onions are slightly brown in color.
Salt & pepper to taste.
Using a fork, scrape the insides of the squash & transfer to a sm. bowl. Combine the squash, onions, sour cream & 1/2 the cheese together & mix well.
Transfer the mixture to a buttered baking dish & top w/ remaining cheese.
Place into a 375º for 15 – 20 mins. until golden brown on top.
