Brussels Sprouts In Garlic Butter
Brussels sprouts, halved lengthwise
1 1⁄2 Tbsp. butter
1 1⁄2 Tbsp. olive oil
3 cloves garlic, smashed w/ the flat of a knife
freshly grated parmesan cheese (optional)
salt & pepper
Melt butter & olive oil in a med. skillet (over med.-high heat) until butter is foamy.
Reduce heat to med., add smashed garlic & cook until lightly browned.
Remove garlic & discard.
Add sprouts cut side down, cover, & cook without stirring on med.-low heat 10-15 mins. or until tender when pierced w/ a knife.
The cut side of the sprouts should get nice & browned, w/ a nutty, buttery flavor enhanced by garlic.
Top w/ freshly grated parmesan & salt & pepper to taste.
