Cream Cheese Cookies
Cream Cheese Cookies
YIELDS - 30-36 COOKIES
8 oz cream cheese, room temperature
1/4 cup butter, room temperature
1 tablespoon vanilla bean extract (or vanilla extract)
1 egg
1 box yellow cake mix (or any variety you prefer)
1 cup mini chocolate chips
1-2 cups chocolate chips, mini M&M's and/or sprinkles (or any toppings you prefer)
Preheat oven to 325
Line cookie sheets with parchment paper, set aside
In the bowl of a stand mixer cream together cream cheese and butter until smooth
Add in vanilla and egg, mixing until combined, scraping down the sides as needed
Mix in cake mix, mixing until just combined
Stir in chocolate chips
Using a small cookie scoop place mounds of dough onto prepared pans
Gently press down to make about 1/2 inch thick
Top with M&M's, sprinkles or additional chocolate chips
Bake for 8-10 minutes, or until bottoms and sides of cookies just start to brown
Remove and let cool for 4-5 minutes on pan
