Beef Burritos
Beef Burritos
1 lb. ground chuck
1 small onion, chopped
4 oz. diced green chilies
3 T. burrito seasoning (recipe included under directions)
1/4 C. water
16 oz. refried beans
10 oz. red enchilada sauce
6 soft flour tortillas
lettuce, tomato,colby jack cheese, green onion, sour cream, etc.
In a medium skillet, brown ground beef until done, drain grease and add in onion to sauté till tender. Add in chilies and burrito seasoning and stir well. Add in water and again, stir well. Remove from heat. In microwave safe bowls, warm beans and enchilada sauce. To plate: place some sliced lettuce on a plate, warm the 6 tortillas in the microwave for 30 seconds. Take each tortilla and spread some of the refried beans on the bottom, almost to the edge. top with 1 T. of the enchilada sauce and spread around. Place 3 good spoonful's of the meat mixture on top of that. Top with a little cheese. Fold each side of the tortilla inward and then roll away from you, tucking as you go. Continue with the 5 remaining tortillas. Top each with a couple spoonful's of the enchilada sauce, fresh tomatoes, more cheese, green onions, sour cream, etc. Whatever your family enjoys. Servings 6 NOTE: you can freeze any remaining enchilada sauce for future use.
Burrito Seasoning
2 1/2 T. chili powder
1 T. garlic powder
1 1/2 T. paprika
2 T. cumin
2 tsp. oregano
1 1/2 T. onion powder
1/4 tsp. cayenne pepper powder
pinch of salt and pepper
Combine well and store in and airtight container.
