Cajun Smothered Round Steak
Cajun Smothered Round Steak (slow-cooker)
2 lbs round steak
1 cup flour
4 tablespoons Cajun seasoning, divided
4 tablespoons oil, divided
1 large onion, diced
1 bell pepper, diced
2 stalks celery, diced
2 tablespoons minced garlic
2 bay leaves
3-4 cups beef stock, divided
1 lb red potatoes, peeled and cut into wedges
2 cans whole green beans, drained
Salt, to taste
Add 2 tablespoons of seasoning flour. Dredge trimmed round steak pieces in flour, and set aside. Heat 1 1/2 tablespoons of oil in a large skillet. Add steak pieces to skillet in batches; brown over medium-high heat 3 minutes each side. Repeat with remaining steaks, adding more oil, as needed. Place steak in slow cooker once browned. Remove all but 1 tablespoons of oil from pan. Add vegetables, bay leaf and remaining seasoning to skillet. Sauté over medium-high heat; cook for about 5-7 minutes or until wilted and beginning to caramelize. Turn heat to high; add 2 cups of stock to skillet. Bring to a boil; scraping bits from bottom. Pour over steaks. Add potato wedges and green beans to slow cooker; pour in enough stock to barely cover the potatoes. Cook on low heat for 6-7 hours or until potatoes are tender. Remove bay leaves before serving. Taste for seasoning, adding salt and additional seasoning.
