Mexican Layer Dip
Mexican Layer Dip
2 cups refried beans
2 cups sour cream
1/2 cup salsa verde
2 medium avocados
3 cloves garlic
2 tsp salt
2 tsp pepper
2 tbsp chili powder
1/2 cup Monterey jack cheese
1 medium red pepper
1/2 cup cilantro
In a small bowl combine refried beans with salt, pepper and chili powder
In a second bowl mix together sour cream and salsa
In yet another bowl (I hope your not cleaning-up the kitchen) mash-up the avocado with lime juice, zest, garlic and a dash of salt - I like it still a bit chunky but mash as much as you like
In a square serving dish, or serving platter, spread out the refried beans
Next is the Avocado mixture...Yummy!!
Now comes the Sour Cream - it is getting so good
Now throw some cheese down, then the peppers and cilantro
I recommend that you refrigerate for at least a hour, but if you are anything like me that hour may only be 10 minutes...either way it is super yummy, especially with your own Homemade Chips
