Three Cheese Spaghetti
Three Cheese Spaghetti
12 oz spaghetti, cooked and rinsed
2 tbsp olive oil
3 cloves garlic, minced
3/4 cup heavy cream
3/4 cup chicken broth
3/4 cup of Italian blend cheese
salt and pepper
2 tbsp fresh parsley chopped
Cook pasta, according to directions on the box.
Drain, reserving 1 cup of the water. Set aside.
In a large skillet, saute the minced garlic in the olive oil. Add in 1/2 cup of the pasta water, heavy cream and chicken broth. Keep on medium heat - -do not boil.
Add in spaghetti and toss with the liquid mixture. Simmer for a few minutes until everything is heated through.
Remove from heat and add in the shredded cheese. Toss until the cheese is melted. Add the chopped parsley.
