Frozen Tropical Fruit Salad
10 ounces cream cheese, softened
1/3 cup mayo
3 Tablespoons powdered sugar
1 teaspoon coconut extract
1 cup heavy cream, whipped until stiff peaks form
3/4 cup coconut
1 1/2 cups pineapple chunks
1 1/2 cup sliced bananas
1 1/2 cups sliced strawberries
Spray a 9x13 baking dish with cooking spray.
In a large mixing bowl, beat cream cheese, mayo, coconut extract and powdered sugar until smooth. Fold in the whipped cream. Add coconut, pineapple, bananas and strawberries. Stir gently and pour into baking dish and cover.
Place in the freezer for 24 hours before serving.
