Cilantro Lime Rice
Cilantro Lime Rice
1 - cup uncooked long-grain white rice
1 - tablespoon butter
1 - cloves garlic, minced
2 - teaspoons freshly squeezed lime juice
1/2 - teaspoon lime zest
2 - cups chicken broth
1 - tablespoon freshly squeezed lime juice
2 - teaspoons granulated sugar
2 - tablespoons fresh chopped cilantro
In a saucepan add the butter and melt.
Add rice and saute for 1-2 minutes until the rice is nicely coated. Add the garlic and saute for an additional minute.
Add 2 teaspoons of lime juice, lime zest and chicken broth. Bring to a boil.
Cover and cook on low 20 minutes, or until rice is tender and all the broth is absorbed.
Remove from heat. In a small bowl, whisk together additional 1 tablespoon lime juice, sugar, and cilantro.
Pour over hot cooked rice and mix in as you fluff the rice. Serve warm.
