MAPLE BACON - FRENCH TOAST
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
In a baking dish, whisk 8 eggs and 1/2 cup buttermilk, whisk in 1 tbs bourbon. Lay 8 slices of Potato bread in egg mixture for 3 min. In a skillet, melt 1 tbs butter. Add 4 bread slices, cook until golden and cooked through. Repeat with 1 tbs butter and remaining bread. *Mix 1/2 cup maple syrup with 1 tbs bourbon. Drizzle over French toast, top with cooked bacon. SERVE & ENJOY...
