Fiesta Scrambled Eggs
6 large eggs
1/4 C. milk
1 T. butter
1 jalapeno, seeded and minced
1 small tomato, chopped
4 green onions, chopped (whites and greens)
pinch of salt and pepper
3/4 C. shredded Colby Jack Cheese (more for topping)
Crushed tortilla chips (for topping)
Salsa
Combine the eggs and milk in a bowl and whisk together. Melt butter in a non-stick skillet over medium high heat. Add in the jalapeno, 1/2 of the green onions and saute for 1 minute. Reduce heat to medium and add the tomatoes and the egg/milk mixture to the pan. Gently stir the eggs until they begin to set, add in 3/4 C. cheese, salt and pepper and continue to stir, total time approx 3-4 minutes. Remove from heat and plate, topping with a few green onions, more cheese and some of the crushed tortilla chips. Serve with salsa
