Italian Potato Cakes

Italian Potato Cakes (makes approx. 8) 2 C. leftover mashed potatoes 2 T. diced onion 2 T. parmesan cheese 1/2 tsp. italian seasoning 1/8 tsp. garlic powder 1 large egg, lightly beaten 1/4 - 1/3 C. all purpose flour vegetable oil for frying In a mixing bowl, combine the potatoes, onion, cheese and seasonings. Stir in the egg and combine well. Stir in 1/4 C. flour and add a little more, if needed, to tighten up the potatoes (not overly stiff though). Heat 1/4" of oil in a skillet over med. high heat. Drop the potato mixture by big spoonfuls in to the oil and gently flatten out just a little. Fry for 2-3 minutes per side until golden brown. Remove to a paper sack or paper towel lined plate.
