Mexican Salad
Mexican Salad
1 large head Romaine Lettuce rinsed, chopped and dried
1 cup Cherry tomatoes halved
1 avocado diced
1 English cucumber sliced
1 small red onion thinly sliced
1 15.25 oz can red beans drained and rinsed
1 15.25 oz can sweet corn drained
1 red bell pepper chopped
1/2 cup black olives cut in half
1/3 cup fresh cilantro chopped
1 cup crumbled cotija cheese or feta cheese
Lime Dressing Ingredients:
1/3 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tablespoon honey
Juice of 1 lime
Zest of 1 lime
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/2 teaspoon sea salt
1/8 teaspoon black pepper freshly ground
Combine all the Dressing ingredients in a small bowl, stir to combine and set aside.
Combine all the salad ingredients except cheese in a large bowl.
Add dressing and toss to combine.
Garnish with cotija cheese on top and serve.
