Lime Grilled Whole Chicken
Lime Grilled Whole Chicken
2-3 lb. whole chicken
6 cloves whole garlic
1 large lime
1 tsp. Adobo seasoning
1/2 tsp. cumin
1/2 tsp. oregano
1/2 tsp. smoked paprika
olive oil
salt and pepper
Remove the gizzards from the chicken cavity. Turn the chicken backbone side up and cut out and remove the backbone. Spread the chicken apart to where you are looking at both halves, skin side up. In a food processor add the garlic, juice of the lime, adobo, cumin and oregano. Pulse to make a thin paste. Rub the chicken with a little olive oil. Loosen the skin over the breast and rub some of the paste under the skin over the breast and then rub the remaining over the entire outside of the chicken. Sprinkle with salt and pepper. Place in a container with a lid and put in the fridge for a minimum of 6 hours. Fire up the grill to 400 degrees. Place the chicken, skin side down on the grill. Close and cook for 30 minutes, watch for any flare ups to prevent burning. Turn the chicken over and cook and additional 30 minutes or until the internal temp. of the chicken reads 160 degrees. Remove from the grill and allow to rest for 10 minutes before carving.
