Crab Stuffed Portobello's
2 Portobello mushrooms
2 oz. cream cheese
2 T. unsalted butter
1 green onion, sliced thin
1/4 C. red bell pepper, diced
6 oz. white crabmeat, drained
2 oz. imitation crab meat, chopped (I know, imitation, but it works in this.)
good pinch of dried dill
pinch each of salt and pepper
1/4 tsp. paprika
1/4 C. Colby jack cheese
Take each Portobello and using a damp paper towel, wipe them clean and remove the stem. Place on a baking sheet. In a small bowl add the cream cheese and butter and microwave for 20 seconds. Stir well and add in the onion, bell pepper, crab meat, seasonings and cheese. Stir well to combine. Divide the mixture and place inside the caps of the mushrooms. Bake at 375 degrees for 20 minutes. Pop under the broiler for a minute to just crisp up the tops.
