Crock Pot Pork Loin Roast with Cabbage
1 3-4 lb. whole pork loin
1 small head cabbage, cut into 1" thick slices
1 small onion, sliced
1 C. apple juice
2 tsp. garlic powder
1 tsp. black pepper
1 tsp. salt
1/2 C. honey
1 T. Dijon mustard
1 tsp. balsamic vinegar
Place the cabbage and onions in the bottom of the crock pot, add in the apple juice. Generously rub the pork with garlic powder and pepper. Place fat side up in the crock pot. Whisk together the honey, mustard, salt and vinegar. Pour over the meat. Cover and cook on high for 5 hours or low for 8 hours.
