SHRIMP BOIL FOIL PACKETS
1 pound baby potatoes halved
1 teaspoon garlic powder
2 corn on the cob cut into 1 inch pieces
2 teaspoons olive oil
2 teaspoons Old Bay seasoning
1 pound frozen peeled deveined shrimp extra large
12 oz smoked sausage cut into 1/2 inch pieces
1 lemon
1/4 cup fresh parsley finely chopped
1/2 cup melted butter divided
Preheat grill to medium high heat.
Boil potatoes until just tender, about 15 minutes. Drain well.
Prepare your foil packets buy placing 4 large sheets of heavy duty foil on your work surface. Place a large piece of parchment on top of each piece of foil.
Evenly distribute the potatoes on each prepared sheet. Drizzle with olive oil, sprinkle with salt & pepper and garlic powder.
Divide the corn, sausage and shrimp between the packets.
In a small bowl, combine 1/4 cup melted butter, 1 teaspoon parsley, 1 teaspoon Old Bay Seasoning, juice from 1/2 lemon and salt & pepper to taste. Drizzle over packages.
Add a slice of lemon on top of each packet and fold to seal.
Place on hot grill and cook for 7 minutes. Flip over and cook for an additional 7-8 minutes until shrimp are cooked through.
Cut into each foil pack, being careful not to burn yourself on the steam as it escapes! Drizzle with remaining butter and a sprinkle of parsley.
You can eat these dinner packs right in the foil packet - no dishes required!
RECIPE NOTES
Oven Directions:
Preheat oven to 375°F.
Place foil packets on a baking pan and cook 25-30 minutes (of shrimp are frozen) or until shrimp is cooked through.
