Cinnamon Apple Muffins
1 cup plain Greek yogurt
3/4 cup unsweetened applesauce
2 eggs
2 teaspoons vanilla
3/4 cup brown sugar lightly packed (115g)
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 cups whole wheat flour fluffed (260g)
2 Granny Smith or baking apples finely chopped (peeled if desired)
Cinnamon Sugar
1 teaspoon cinnamon
2 tablespoons sugar
Preheat oven to 350 degrees F.
In a large bowl, whisk together yogurt, applesauce, eggs, vanilla and brown sugar until smooth.
Add baking powder, baking soda, cinnamon and salt and whisk until combined.
Fold in flour and apples with a spatula, just until moistened and no flour remains.
Lightly grease a non-stick muffin pan or fill with paper liners, and fill muffin cups 3/4 full.
To make the cinnamon sugar, stir together cinnamon and sugar. Sprinkle over muffins before baking.
Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean or with moist crumbs. Let cool for 5-10 minutes in the pan before removing to a wire rack to cool completely.
