Cherry Pineapple Muffins
Cherry Pineapple Muffins
2 eggs
1/3 cup sugar
1/4 cup melted butter
1/4 cup Maraschino Cherry juice
1 cup unsweetened crushed pineapple with juice
1/4 cup coarsely chopped maraschino cherries
1/2 teaspoon almond extract
2 cups flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
In a large bowl add and combine well: eggs, sugar,
butter, cherry juice, pineapple, and almond extract.
In a small bow sift flour, baking powder, baking soda
and salt. Combine wet and dry ingredients and fold
together gently until mixed. Spoon into prepared pan.
Bake at 400 degrees for 15 to 20 minutes. Remove and
cool.
This recipe for Cherry Pineapple Muffins serves/makes
1 dozen
