Spooky Spaghetti
Spaghetti, cooked according to package
Tomato Sauce, your choice
Eyeballs:
1 lb ground beef
1 large egg
1/4 cup dry breadcrumbs
small amount of milk
green olives with pimentos
Put the breadcrumbs in a bowl, add enough milk to moisten and let sit for a few minutes. Blend in egg, then add the ground beef, mix until combined. Form meatballs around each olive, keeping the edge of the olive exposed, resembling the pupil of an eye. Bake at 400 for 15-20 minutes until cooked through (time depends on size of meatballs).
Pile spaghetti on plate, top with sauce, then 2 meatballs "facing" front. Serve (If I have extra meatballs I pile them in a bowl, drizzle a little sauce over them and put them on table, looks creepy and provides extras for everyone).
I don't add a lot of seasoning to the meatballs when I make them this way, the olives usually provide enough salt and flavor, but feel free to add whatever your family likes. Or substitute your favorite meatball recipe for mine, just adding the olives.
