Spiced Harvest Pancakes
2 1/2 cups biscuit baking mix
1 cup milk
1 cup apple butter
2 T oil
1/2 t ground ginger
1/2 t cinnamon
1/2 t nutmeg
2 eggs beaten
Stir together all ingredients until well blended. Pour about 1/4 cup batter per pancake onto a hot griddle that has been sprayed with non-stick vegetable spray. Cook over medium heat until pancakes start to bubble; flip and cook until golden. Makes about 1 dozen.
