Thunder Cake
Cake:
1 cup butter
1 cup water
2 cups flour
2 cups sugar
2 eggs
3/4 cup shredded coconut
1/2 cup sour cream
1 teaspoon almond extract
1/2 teaspoon salt
1 teaspoon baking soda
Icing:
1/2 cup butter
1/2 cup milk
4 1/2 confectioner's sugar
1/2 teaspoon almond extract
1 cup chopped walnuts
In a large saucepan, bring 1 cup butter and water to a boil.
Remove from heat and with an electric mixer carefully blend in flour, sugar,
eggs, coconut, sour cream, almond extract, salt, and baking soda until smooth.
Pour into greased 13 x 9" baking pan.
Bake at 375 degrees for 25-30 minutes or until cake is golden brown.
For the icing, bring 1/2 cup butter and 1/2 cup milk to a boil. Remove from
heat. Mix in confectioner's sugar and 1/2 teaspoon almond extract until smooth.
Stir in walnuts and spread frosting over cake.
