CHEWY OATMEAL RAISIN COOKIES
1 1/4 cups rolled oats
3/4 cup all-purpose flour
1 tsp ground cinnamon
½ tsp baking powder
½ tsp salt
In a separate bowl, cream together:
½ cup butter or margarine
½ cup sugar
½ cup brown sugar
1 large egg
1 tsp vanilla extract
1 cup raisins (pre-boil on med heat for 5 min)
Combine the oats, flour, cinnamon, baking powder and salt in a large bowl. In a separate bowl, cream together butter, sugars, egg, vanilla. Add dry to wet and stir. When completely mixed, add raisins.
Bake in pre-heated oven at 350 F for 15 min.
