CAJUN POTATO SALAD
CAJUN POTATO SALAD 3 lbs. red potatoes 1 red pepper, chopped 1 green pepper, chopped 6-8 green onions, sliced ½ c. fresh minced parsley 1 c. mayo ¼ c. half & half 2 Tbsp. cajun seasoning 2 large Eggs, hard boiled and sliced Place potatoes in a large pot; cover with water and bring to a boil. Boil 15-20 minutes or until tender. Drain and set aside to cool. Once cool, cut potatoes into 1½ inch pieces. In a large bowl, combine potatoes, peppers, onions, and fresh parsley. In a separate small bowl, mix mayo, half & half, and cajun seasoning. Pour mayo mixture over potato mixture and stir until evenly combined. Top with sliced Phil's Fresh Eggs; sprinkle with additional cajun seasoning and fresh parsley as desired.
