Velveeta Pepper Jack Cornbread
3 - 6.5 oz packages yellow cornbread mix
2 - cups creamed corn
1 - 12 oz package Velveeta Pepper Jack Cheese, Velveeta Mexican Mild, grated
1- small yellow onion, grated
2 - ounces pickled jalapenos slices, optional
3 - eggs
Mix all the ingredients together and pour into a 13 x 9 inch baking dish sprayed with non stick spray.
Bake at 425 degrees for 30 minutes. Cool in pan and slice into 12 equal squares.
This cornbread is like a thick, moist, spicy cake. It is delicious served hot and drizzled with honey.
Servings: 12-14
Note: If you do not like Velveeta you can substitute by using 12 ounces of regular pepper jack cheese.
