Pineapple Carrot Salad
Pineapple Carrot Salad (serves approx. 6)
3 C. grated carrots
8 oz. can crushed pineapple, drained (chunk can be used also)
1/2 C. raisins (I used craisins this time)
1/2. C. chopped pecans
1 tsp. sugar
pinch of salt
1/2 tsp. lemon juice
3-4 T. mayo
In a bowl, combine all ingredients (using as little or as much mayo as you like) and chill for 30 minutes before serving.
