Macaroni Green Pea Salad
2 cups cooked elbow macaroni - 1 cup uncooked
1 egg chopped optional
1/2 cup diced celery
1/4 cup chopped red onion
1-2 tsp sugar to taste
2 tsp white vinegar
1/2 tsp coarse sea or kosher salt
1/2-1 tsp prepared yellow mustard
1/2- 3/4 cup mayo, I used reduced fat, NOT fat free start with 1/2 cup
1/4 tsp ground pepper, white or black I used white for this recipe
2 tsp dried dill
1/2-3/4 cup frozen green peas, thawed slightly
Cook macaroni as indicated on package. Drain and rinse under cold water. Drain again.
In a large mixing bowl, combine all other ingredients except peas.
When completely combined, gently fold in peas to dressing mixture, leaving out a few for garnish.
Top with remaing peas and a bit more dill for garnish
