Carrot Cake Cookies w/ Orange Cream Cheese Frosting
Carrot Cake Cookies w/ Orange Cream Cheese Frosting
1/4 Cup softened butter
1/3 Cup Sugar
1/4 cup melted coconut oil
1 Tablespoon molasses
1 Tablespoon vanilla
1 Egg
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1 Cup flour
1/3 Cup pecans
1/2 Cup grated carrots
Frosting-
4 oz softened cream cheese
1/4 Cup softened butter
1 teaspoon vanilla
1 teaspoon orange zest
1 1/2 Cups powdered sugar
Preheat your oven to 350° and line a baking sheet with parchment paper
In a large mixing bowl, mix together your butter and sugar
Mix in your egg, vanilla, and molasses
Now mix in your baking powder, salt, cinnamon, and flour
Fold in your pecans and grated carrots
Use a ice cream scoop to scoop out your dough onto your baking sheet
Bake for 8-10 minutes, depending on the size of your cookies
Once your cookies are cooled, frost and top off with a few more pecans and enjoy!
Frosting-
In a large mixing bowl, mix together your cream cheese, butter, and vanilla
Now mix in your orange zest and powdered sugar until you have a thick creamy frosting
