Poor Man's Pecan Pie

Poor Man's Pecan Pie 1 unbaked pie shell 3 eggs 1 cup sugar 1 cup old fashioned oats 3/4 cup dark corn syrup 1/2 cup flaked coconut 2 tbsp butter, melted 1 tsp vanilla Preheat oven to 375F. Combine all filling ingredients and mix well. Pour into the unbaked pastry shell. Bake at 375F for 15 minutes. Reduce temperature to 350 and bake an additional 30 minutes, or until center is set and inserted toothpick comes out dry. Allow to sit and cool before serving.
