Caramel Apple Muffins
Caramel Apple Muffins
2 cups flour
3/4 cup sugar
2 tsp baking powder
2 1/2 tsp cinnamon
1/2 tsp salt
1 egg
1 cup of milk
1/4 cup melted butter
2 tsp vanilla
1/2 cup peeled and chopped apple pieces
12 caramels, chopped into small pieces
Topping:
1/2 cup brown sugar
1/3 cup quick oats
3 tbsp melted butter
1 tsp cinnamon
Combine flour, sugar, baking powder, salt and cinnamon in a bowl.
In a separate bowl combine eggs, melted butter and vanilla. Mix well.
Add wet ingredients to dry ingredients. Mix until incorporated. Do not over mix.
Fold in apples and caramel pieces into the batter.
Spoon batter into prepared muffins, filling each of them up 3/4 of the way.
Combine topping ingredients, and mix until crumbly. Spoon over top of the muffin batter.
Bake at 350F for 20-25 minutes. Allow to cool slightly before removing the muffins to a cooling rack. Makes 12-14 muffins.
