Sweet Potato Bread
Sweet Potato Bread
2 C. self rising flour
1 C. sugar
2 C. cooked and mashed sweet potatoes
2 eggs
1/3 C. vegetable oil
1/4 C. milk
1/4 tsp. cinnamon
1 T. vanilla
1/2 C. chopped pecans
Stir together the sugar, sweet potatoes, oil, eggs, cinnamon, milk and vanilla until smooth. Fold in the flour until well combined the fold in the pecans. Pour into a greased loaf pan (9x5) and bake at 350 degrees for 60 minutes. Let cool on a wire rack.
