FRESH VEGETABLE SALAD
FRESH VEGETABLE SALAD
4 ears yellow corn, cooked, cooled, and cut off the cob
2 large tomatoes, seeded and chopped
6 stalks celery, chopped
1 cucumber, chopped
1/2 red onion, finely chopped
1/2 cup Zesty Jalapeno sour cream
1/4 cup mayonnaise
2 tablespoons white wine vinegar
1/4 teaspoon salt
1 teaspoon celery seed
1/4 teaspoon black pepper
1 diced any color you want bell pepper
In a large bowl, mix all vegetables together.
In a medium bowl, whisk together sour cream, mayonnaise, vinegar, salt, celery seed, and pepper until smooth.
Pour dressing over vegetables and fold until well combined. Serve immediately.
NOTES
You can use regular sour cream, I used jalapeno sour cream for an extra kick. The original recipe calls for a green bell pepper as well, but I don't like green bell pepper in the salad,so I used red bell pepper
