One Bowl Banana Coco-Nut Bread
2 med over-ripe bananas, mashed
1/2 cup mayo / dressing (I used olive oil mayo)
1 egg
1 1/2 cups AP flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
3/4 cup sugar
1/3 cup flaked coconut
1/3 cup chopped pecans
Preheat the oven to 350° F. In a large bowl, mash the bananas and mix in the mayo and egg with a whisk. Add the dry ingredients to the wet mixture and stir JUST until blended; the mixture will be thick. Add the coconut and pecans - gently incorporate, just a few stirs. Spray a loaf pan and add the mixture. Bake for 60-70 minutes or until a toothpick comes out clean. Remove from the pan and let cool completely. Store in the refrigerator.
