POTATO PANCAKES WITH SOUR CREAM AND CHIVES
Vegetable oil
2 tbs flour
1 pound potatoes
1/4 cup chopped chives
2 eggs, beaten
1/2 onion
Salt and Pepper
1 cup sour cream
In a bowl, combine sour cream and chives, season with salt and pepper. Using a box grater set in a bowl, coarsely grate potatoes and onion, stir to combine. Squeeze out as much liquid as possible, transfer potato onion mixture to a bowl. Stir in flour and 1 tsp salt. Mix in eggs. Transfer mixture to a fine strainer, drain.
IN A SKILLET, add enough oil to measure a depth of 1/4", then heat. Scoop 1/8 cup mounds of the mixture onto a cutting board and flatten to form 3" wide pancakes. Place pancakes into pan and cook until golden, 5 min. drain. Sprinkle with salt and SERVE with chive sour cream.
