Fluffy Sweet Potato Biscuits
2 cups hot boiled sweet potatoes, mashed
1/2 cup vegetable shortening
1 teaspoon salt
1-1/2 cups white flour
1/4 cup granulated sugar
2 teaspoons baking powder
Preheat oven to 450 degrees F.
Combine sweet potatoes, shortening, and salt.
Set aside to cool.
When cool, combine with other ingredients.
If the dough is too sticky to roll, add more flour.
Roll dough on a floured board, and cut with a biscuit cutter.
Bake for 10-15 minutes.
