Butterscotch Crumb Squares
1 c. flour
1/4 c. oats
1/4 c. brown sugar
1/2 c. butter
1/2 c. pecans, chopped
1 (12 oz.) jar caramel ice cream topping
1 qt. vanilla ice cream, softened
Combine flour, oats and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in nuts. Pat mixture into a 9X13 inch pan. Bake at 400 for 15 minutes. Stir while still warm; to crumble. Cool. Spread half of the mixture in a 9 inch square pan. Drizzle half the caramel topping over this. Spoon ice cream carefully into pan. Drizzle remaining topping over ice cream. Sprinkle with remaining crumbs. Freeze. Cut in squares to serve.
