Sausage Potato Stew
Sausage Potato Stew
14 oz smoked sausage, sliced into 1″ slices
1 tsp olive oil
1 medium onion, thinly chopped
2 cloves garlic, minced
1 tsp salt
1 tbsp pepper
2 tsp paprika
1 tsp cumin
3 lbs red potatoes, cut into bite size piece
2 cup no fat chicken stock
6 tsp grated parmesan cheese, divided
1 tbsp chopped fresh parsley, divided
In a large soup pot, over medium heat, cook sausage until warmed through and well browned
Remove sausage to a plate, reserving any liquid in the pot
Add in olive oil & chopped onion, cooking until onion is browned and soft, about 5 minutes
Add in minced garlic, salt, pepper, paprika & cumin and cook until garlic is fragrant, 1-2 minutes
Add in potatoes & chicken stock, cover with lid and simmer for 15 minutes or until potatoes are tender, make sure to stir a few times to loosen up all the yummy bits on the bottom of the pot
Remove lid and cook for an additional 10-15 minutes until potatoes are very tender and sauce thickens-up
Serve stew topped with 1 teaspoon of grated parmesan cheese and some fresh parsley
