FRESH TOMATO SALSA
FRESH TOMATO SALSA
3 large plum tomatoes diced
3/4 cup diced vidalia onion
2 jalapeños seeded and minced
3 tablespoons chopped cilantro
zest and juice of one lime
kosher salt and fresh ground pepper to taste
In a large bowl, toss together the tomatoes, onion, jalapeños, cilantro, zest and lime juice. Season with salt and pepper to taste. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
