One Skillet Italian Sausage & Rotini Pasta
2 T. olive oil
1 lb. sweet italian sausage links cut into 1/2" pieces
1 medium onion, chopped
1 red bell pepper, seeded and chopped
2 C. freshly washed torn kale (I buy and freeze it in 2 C. portions)
2 large garlic cloves, minced
14.5 oz. can chicken broth
6 oz. can tomato paste
3 cans (using the empty tomato paste can) water
1 tsp. dried basil
1/2 tsp. oregano
2 1/2 C. dry rotini pasta
1 C. shredded mozzarella cheese
1/4 C. parmesan cheese
Heat the oil in a large skillet with a lid over med. high heat. Add the sausage and cook for 5 minutes. Stir in the onions, bell pepper and kale. Cook for 6-7 minutes till the sausage is cooked through and veggies are tender. Stir in the broth, tomato paste, water, basil and oregano. Combine well. Stir in the pasta, cover and cook over medium heat for 30 minutes, stirring often to keep the pasta moving. Once the pasta is tender and liquid has been absorbed stir in both cheese just before serving.
