Hash Brown Fritters
Hash Brown Fritters (approx. 8 fritters)
1 1/2 C. thawed, frozen shredded hash browns
2 T. diced onion
1 large egg
3 1/2 T. all purpose flour
good pinch each of salt, pepper and smoked paprika
veg. oil for frying
Put the thawed hash browns in a couple paper towels and wring out any liquid that you can. Put the hash browns in a bowl and stir in the onion, egg, flour and seasonings. Put enough oil in your skillet to just cover the bottom and heat it over med. high heat. Drop the fritters by spoonfuls and slightly flatten out once in the pan. Fry till golden on both sides, about 2-3 minutes per side. Drain on a paper towel lined plate and sprinkle with a pinch more salt while still hot.
