Potato Cakes
3 cups leftover mashed potatoes
1 egg
3 green onions, chopped fine
3/4-1 cup AP flour
Salt and pepper
Combine all ingredients until forms a thick paste.
Drop by 1/4 cup spoonfuls (I use a measuring cup) I to hot oil.
Brown on each side.
Sprinkle with salt while hot.
