STIR FRIED BOK CHOY
STIR FRIED BOK CHOY
1 tablespoon sesame seeds
1 tablespoon canola oil
1 tablespoon grated fresh ginger
1 medium onion chopped
1 large head bok choy (see notes)
2 cloves garlic minced
1/8 – 1/4 teaspoon crushed red pepper (to taste)
1 tablespoon soy sauce
Toast the sesame seeds in a dry skillet over medium heat until light browned; approximately 2-3 minutes. Toss or stir frequently to keep from burning. Remove and place in a small bowl.
Heat canola oil in the same skillet over medium high heat. Add the ginger, onion and bok choy. Cook for 2-3 minutes stirring frequently. Add the garlic, red pepper and soy sauce and cook for additional 1 minute. Sprinkle with toasted sesame seeds and serve immediately.
NOTES
Remove the bottom 2 inches of the thick bulb. Chop the bok choy and rinse thoroughly in a colander. Shake as much of the water out as possible. Dry excess water with a paper towel.
