Sweet and Spicy Rotel Sauce
1 can of Rotel chunky style diced tomatoes
1/2 cup of ketchup
1 teaspoon spicy mustard (like Emeril's)
2 tablespoons of light brown sugar, packed
1/2 teaspoon of Cajun seasoning (like Slap Ya Mama) optional
In a small saucepan, combine the tomatoes, ketchup, mustard, brown sugar, and Cajun seasoning. Bring to a boil, reduce heat and let simmer until heated through and thickened. Spoon hot sauce over slices of meatloaf or other meat, poultry, pork or fish.
