Cheese and Bacon Jalapeno Rellenos
10 jalapenos halved lengthwise, deseeded
8 oz. cream cheese softened
1/2 cup cheddar cheese shredded
4 slices of bacon cooked and crumbled
1/2 cup flour
2 eggs beaten
2 cups panko bread crumbs
1 tsp salt
1/2 tsp pepper
1/4 cup parmesan cheese
cooking spray
preheat oven to 350 degrees F
spray baking sheet with cooking spray
using a mixer beat together cream cheese, cheddar cheese and bacon
using a spoon fill the inside of each jalapeno half with the cheese mixture
pour the flour into a shallow dish, the eggs into another and the panko bread crumbs into yet another
add the salt, pepper and parmesan cheese into the panko bread crumbs and mix
carefully roll one of the filled jalapeno halves in the flour until completely coated
dip it into the egg mixture then straight into the panko mixture, making sure it's completely covered
place on the prepared baking sheet and repeat with remaining pepper halves
spray the jalapeno peppers with cooking spray
place in the ove and cook for 35 to 45 minutes until golden brown
remove from the oven
