Zucchini Bread with Banana
Zucchini Bread with Banana
3 eggs
1 C. sugar
1 T. vanilla
3/4 C. vegetable oil
2 C. grated zucchini
1 banana, grated or mashed
3 C. self rising flour
1 1/2 tsp. cinnamon
1 C. chopped pecans
In a large bowl, beat the eggs, stir in the sugar, cinnamon, vanilla and oil. Add the zucchini and the banana, mix well. Add in the flour, 1 C. at a time until well combined. Add the pecans, stir well. Pour into a greased 9x5" loaf pan and bake at 350 degrees for 60-70 minutes. Turn out onto a wire rack to cool.
