CARAMEL PEACH UPSIDE DOWN CAKE
2 tablespoons butter
1/2 cup brown sugar
2 large peaches sliced thin in crescent shape
1 3/4 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter softened
3/4 cup sugar
1 1/2 teaspoons vanilla
1/2 teaspoon almond extract
1 tablespoon cinnamon
2 large eggs
3/4 cup buttermilk
Caramel Sauce
2 tablespoons butter
1/2 cup brown sugar
1/4 cup heavy cream
1 1/2 teaspoons vanilla
Preheat oven to 350 degrees.
Melt 2 tablespoons butter in ovenproof skillet over medium heat. Reduce heat to low and sprinkle 1/2 cup brown sugar over butter as evenly as possible. Cook on low undisturbed for 3 minutes. Remove from heat. Arrange peaches in a circular motion working on the outside of the pan first.
Combine flour,baking powder, baking soda, salt and cinnamon in a small bowl.
Beat together butter, sugar, vanilla and almond extract for about 3 minutes. Beat in eggs one at a time; until mixture is creamy and volume has doubled; approximately 2-3 minutes.
Turn mixer to low and add flour mixture and buttermilk mixture; alternating between them. Beat just until combined, Gently spoon over peaches.
Bake until golden brown for 30-35 minutes. Cake is done when wooden toothpick inserted in the middle comes out clean.
Being very careful immediately invert on to platter.
Over low heat cook 2 tablespoons butter, 1/2 cup brown sugar, heavy cream, and 1 1/2 teaspoons vanilla in small saucepan. Simmer over low heat for 5-7 minutes, Remove from heat and allow to cool for 15-20 minutes, Drizzle over cake.
NOTES
This cake is delicious a la mode with vanilla ice cream.
