Texas Lasagna
Texas Lasagna
1 1/2 pounds lean ground beef
2 cup cottage cheese
2 eggs
1 pkg taco seasoning mix
1 14.5 oz can diced tomatoes
1 15 oz can tomato sauce
1 small can diced chiles
5 flour tortillas cut into strips (see recipe for homemade here)
3 cups shredded Tex-Mex mix cheese
Instructions
Brown the ground beef in a skillet. Drain. Add taco seasoning, tomatoes, tomato sauce and green chiles. Mix well and set aside.
In a small bowl combine cottage cheese and egg.
In a prepared 9x13 baking pan, spread ½ the meat sauce, half of the tortilla strips, ½ cottage cheese mixture and ½ the Tex-Mex cheese. Then add the remaining strips, cottage cheese mixture, meat sauce and finishing with the remaining Tex-Mex cheese.
Bake uncovered for 40 minutes at 350F. Allow to stand 10 minutes before cutting and serving.
