TUNA PATTIES
5 oz. can solid white Albacore tuna, drained
1 green onion, chopped
1 egg, beaten
1/3 C. all purpose flour
1/4 tsp. cayenne pepper
pinch each of salt and pepper
5 buttery round crackers, crushed
oil for frying
In a bowl combine the tuna, onion, egg, flour, seasonings and crackers. Heat about 3 T. oil in a frying pan over med. high heat. Drop tuna by spoonful’s into the oil (this makes 6 patties), reduce the heat to medium. Fry for 4-5 minutes then flip and fry another 3-4 minutes or until golden brown. Remove to a paper towel lined plate.
