Santa Fe Chicken
Santa Fe Chicken
1 can (15 oz) black beans, rinsed and drained
1 jar (16 oz) fresh salsa
1 teaspoon of oregano
mixed together in a sauce pan on the stove
Add 4, 3 oz portions of Chicken Breast (Recommend cubing chicken before adding) sprinkle 1/2 teaspoon of cumin simmer till chicken is cooked and liquid has cooked off Once it has cooked remove from the heat. Add 1 cup of reduced fat cheddar cheese and 2 tablespoons of Fat free sour cream. Garnish with scallions.
