Strawberry Bread
1/2 cup butter. softened
1/2 cup brown sugar
1/2 cup white sugar
4 ounces cream cheese, softened
2 eggs
1 tsp vanilla extract
2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup low fat buttermilk
1 1/2 cups strawberries, rinsed & chopped
Preheat oven to 350
Prepare a mini loaf pan (with 6 mini loaves) or 2 9x5 loaf pans with non-stick spray
Using an electric mixer, beat butter, sugars and cream cheese until fluffy
Add eggs in one at a time
Add in vanilla
In a separate bowl mix flour, baking powder, baking soda & salt
Add flour mixture to butter mixture until just combined
Add in buttermilk mixing until just combined, making sure to not over-mix
Carefully fold in chopped strawberries, dough will be very thick
Divide mixture evenly among desired pans
For mini loaves bake for 30-35 minutes, or until toothpick inserted into the center comes out clean
For large loaf pans bake for 50-60 minutes or until toothpick comes out clean
Let cool for 5-10 minutes and then serve
